Next to chocolate chip cookies, and sugar cookies, peanut butter cookies are my weakness. Are you a cookie lover? What kind of cookies are your weakness?

I really love baking, but I don’t do it often because I never really had the proper equipment. That all changed the other day when I won a Kitchen Aid Stand Mixer (and ice cream maker attachment …. which will be used often, so stay tuned)!

{ Shop Kitchen Aid Stand Mixers }

I won the Kitchen Aid stand mixer from Covet Garden and 2life app’s “We All Scream for Ice Cream” contest – you can imagine my excitement! I had to make something with it the day it arrived at my house; and after looking through the booklet that came with it, I was craving peanut butter.

The story of me winning it is actually quite entertaining. Before bed one night at my cottage, I was chatting with my family about how I really wanted a Kitchen Aid Mixer  (I had just been making macarons with friends earlier in the day and it would have come in so handy).

When I woke up in the morning, I opened an email from 2life letting me know I had won the contest and this fabulous chrome Kitchen Aid Mixer would be delivered when I arrived home from my vacation. At first, I wasn’t quite sure if I was dreaming.

I wouldn’t be opposed to all my wishes coming true like this πŸ˜‰

Peanut Butter Cookies (KitchenAid reipe)

Prep time: 15 mins | Cook time: 12 mins | Total time: 27 mins
Serves: 36

Ingredients
  • ½ cup creamy peanut butter
  • ½ cup butter, softened
  • ½ cup white sugar
  • ½ cup light brown sugar, packed
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1&1/4 cups all-purpose flour
Instructions
  1. Place peanut butter and butter in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 6 and beat about 1 minute, or until mixture is smooth. Stop and scrape bowl. Add sugars, egg, and vanilla. Turn to Speed 4 and beat about 1 minute. Stop and scrape bowl.
  2. Turn to STIR Speed. Gradually add all remaining ingredients to sugar mixture and mix about 30 seconds. Turn to Speed 2 and mix about 30 seconds.
  3. Roll dough into 1″ balls. Place about 2″ apart on ungreased baking sheets. Press flat with fork in a criss-cross pattern to 1⁄4″ thickness.
  4. Bake at 375°F for 10 to 12 minutes, or until golden brown. Remove from baking sheets immediately and cool on wire racks.

    That’s so cool! Congrats on winning. You’re definitely going to put it to good use. Those cookies look so yummy. You mention making macarons and I’ve heard they’re really difficult to make, have you made them before?

      Thanks Julia! It was my first attempt to make macarons, and let’s just say it was pretty much a fail πŸ˜‰ We tried twice and both times it didn’t work, although it was looking better the second time around. We’ll be trying again next week so hopefully it’s a success (we won’t stop trying until it’s perfect!). Stay Tuned!!
